WHAT YOU NEED:
• 3⁄4 boil-in-a-bag brown rice
• 1 tsp extra-virgin olive oil
• 4 oz raw boneless, skinless chicken breast
• 1⁄2 orange, divided into sections
• 1⁄4 cup orange juice
• 1 1⁄2 tbsp no-sugar-added all-fruit spread
• 1 cup frozen broccoli
HOW-TO:
Cook rice, according to package directions. Heat oil in a skillet over medium heat. Cut chicken into 1-inch chunks, add to skillet and cook until browned, turning after 3 minutes. Add orange, orange juice and fruit spread to chicken. Reduce heat to medium-low and cook for 2 or 3 more minutes until heated through. After adding orange ingredients to chicken, cook broccoli in microwave, according to package directions.
