There is no reason to fear roast beef. Sure, some cuts of beef contain a high volume of fat. But when you’re at the grocery store, opt for the leanest cuts (top round, eye of round and bottom round) and stay away from the fattiest kinds (including rib, ribeye, spare rib and brisket) and you should be OK. In this case, try going to the deli counter and get lean roast beef. It's quick, it's simple and it's good for you.
WHAT YOU NEED
• 2 slices whole wheat bread
• 2 tsp mustard
• 3 oz fresh deli roast beef
• 1 low-fat cheddar cheese slice
• 1 lettuce leaf
• 1 tomato slice
• handful baby carrots
• 1 orange
HOW-TO
Spread mustard on each slice of bread and layer with roast beef, cheese, lettuce and tomato. Serve with carrots and have orange for dessert.
